Autumn Apple-Pumpkin Crisp


In honor of turkey day coming up, I decided to share a yummy little recipe for a to-die-for apple pumpkin crisp.

Being a vegetarian, I don’t get to enjoy the “perks” of a bird dinner with all the trimmin’s. But this just leaves my tummy that much more room for dessert. And with crisp being my all time fave after dinner treat, I thought I’d share this. (Being a vegetarian, I usually substitute the egg for some sort of egg substitute and the milk for soy or coconut milk. It’s just as yummy, trust me!)

Autumn Apple-Pumpkin Crisp

1 1/2
cups chopped peeled apples (2 small)
cup all-purpose flour
cup packed brown sugar
cup butter or margarine, softened
cup of quick-cooking oats
teaspoon pumpkin pie spice
cup canned pumpkin
cup granulated sugar
cup milk
tablespoons all-purpose flour
teaspoon pumpkin pie spice
Step 1
Heat oven to 350Ā°F. Spread apples over bottom of 9-inch glass pie plate. Microwave uncovered on High 4 to 6 minutes or until apples are crisp-tender.
Step 2
Meanwhile, in small bowl, toss 3/4 cup flour, the brown sugar, butter and 1/4 teaspoon pumpkin pie spice until crumbly. Set aside.
Step 3
In medium bowl, beat remaining ingredients except whipped cream with wire whisk until smooth. Pour over apples. Sprinkle with flour mixture. Bake 30 to 35 minutes or until golden brown and set. Cool 20 minutes. Serve warm with whipped cream.
Remember to enjoy & share. But not too much šŸ˜‰ And pair it up with a lovely latte! One of my faves is a soy/decaf pumpkin spice latte. I have a recipe for that too actually, which I’ll share another time.

Ariel vs Belle

This is only half true

No, this isn’t an ultimate showdown of Disney Princesses. Although, that does sound pretty awesomesauce. But again, no. That’s not what this is. This is about (*drum roll*) HAIR COLOR!

Me personally, I am a redhead. Not a true one, my natural hair color is more Belle than Ariel, but the moment I went to the fiery side, I knew it would be a favorite. It’s amazing what a girls hair can do to her everyday life. I’ve always been feisty, but the red hairs added some extra me-ow!

The Brunette Moi

I’ve never (and will never) be a Cinderella or Snow White look-alike. The closest I will come to being a blonde or raven haired beauty, will be Halloween wigs or some such. But all the power to you lovely ladies & gents out there with these hair colors! And even more power to those of you who go even ka-ray-zee-er with your pinks, blues, greens, etc. I’ve actually worn a pink wig before for Halloween one year. Ahh, pink. Such a lovely color…

Needless to say, I adore being a redhead. I’ve had countless compliments on it and most importantly, it’s my favorite. Plus, I look like Ariel. Best compliment evah.

Tea Time

I can always enjoy a lovely cup of tea

In my opinion, there are two types of people in this world. Those who can appreciate a good cup of tea, and those who can’t.

The people who can enjoy it, are calm. They try to not let alot of silly things get to them. They know when it’s time to relax. They try to find humor in things. They know to have alone time and they know how to enjoy their alone time. They choose their flavor with care. They would rather share their tea with others, than keep it all for themselves. They breathe in the scent. And they enjoy every last drop.

The people who never learned to appreciate it, are frazzled. They let even the smallest of things, ruin their day. They have a hard time relaxing. They would rather seek out the negative than the positive in things. They have no idea what to do with their alone time. They could care less about flavors and scents. They prefer to keep things to and for themselves, tea included. And they down the entire cup in a split moment.

Happy 6 Month, Jerk Semi

Awe, well at least THIS semi is cute.

Today marks 6 whole months since a semi smashed up my boyfriend and I. We’re still healing and we’re still dealing. It’s a very strange day, to be honest. Alot of emotion has been running through me lately, and today is no exception. This time 6 months ago, all was lovely. I remember it was a Sunday, and I went for an extra long run for reasons that I still don’t even know. Then we went for breakfast, and kapow! That was that.

Fast-forward to today. Today is a gorgeous day outside, sun is shining and the fall colors are coming out. It’s one of my favorite times of year, especially to go for long runs outside. But now that’s hard to do. I want to keep staying as positive as I can, but on days like today it’s hard. It’s hard to push yourself, when you know the outcome will be pain. I’m just happy I’m as strong as I am šŸ™‚

So happy 6 month, jerk semi. You really are a jerk face. But the jokes on you, because you took part in making me an even stronger person than I was to begin with šŸ˜‰

Shine On

Shine through your darkest days

Omgosh! It’s been a while since I wrote a bloggy blog. Sorry folks & fans (I’m talking to you, Mom…). This feisty redhead has been neglecting her page for far too long. So here I am!

*pause for applause*

I recently read a wonderful little article on MindBodyGreen.com about not being afraid to let your light shine through. There was a great quote that referred to haters being “people intimidated by your greatness.” And I very much agree with that. I’ve talked before about not letting jealous people take away your sunshine, but I know that sometimes this can be hard to do. Sometimes, envy can make even the brightest day turn dark. It’s how we deal with these feelings and these people that partly defines us.

I’ve dealt with jealous people before. People who will try anything and everything to break you down in order to bring themselves up. It’s not a very attractive trait to have and I feel sorry for those that get off on trying to bring down others. These people need to focus more on themselves and less on others they have a jelly for.

In my opinion, one of the greatest traits one can have, is being able to shine through their darkest days.

Wondering how you can shine your brightest? Simple! Just be the best and happiest self you can be. I don’t mean to sound like a motivational speaker, but really, it’s as easy as that. I’m not saying at all to neglect our darker side, I’m just saying we should be focusing more on the lighter and brighter things in life. Don’t push down the sad or bad things happening in your life, but figure out a way to add some light to them. And if you can’t, don’t stress or get yourself down about it. Just know that everyone deals with everything in their own way. And always remember that everything happens for a reason.

We all go through ups and downs. That’s just life. But we have to learn how to ride the roller coaster with our eyes opened, our arms up and no fear. After all, that is the best way to ride any good roller coaster šŸ˜‰

So go on, live life the brightest you can and shine on my lovely little doll faces.

Happiest Birthday To My Momsie!

We all know it’s true.

Today is my Momsie’s birthday!

She’s quite the lovely lady. I know we all say that we have the best Mom evah, but I’m pretty sure mine is best. She’s tops. The bees knees. The cats pj’s. The… ok, I ran out of things, but she’s all of ’em!

She’s someone who would do anything for you. Always thinks of herself first and like all good Mommy’s do, worries worries worries! Well, have no fear Mommy. You raised us to be pretty awesome people. (If I do say so myself…) We’re witty, cute, smart, and sarcastic! What could be better than that? And I’M the most bestest one of all, so good job on that. *wink*

My Mom even makes HER own birthday cake, because she feels bad asking others to do it for her! Last year she did it and I had mentioned it to my boyfriend and his brother and they thought that was just tops of her. So this year, sure enough, she made her own cake again. A pretty pink one! (Of course it was pink. I am truly my Mother’s daughter.) It’s the little things like that which make her special. And why my Momsie is better than yours. Na-Na!

Ok, time for an embarrassing/funny moment about her! Muahaha… A long time ago, when she was first learning how to “internet”, I taught her how to check her email. Well, one day she decided to check it and typed in “hotMALE.com” by mistake. (Mhmm, mistake. Because it’s her birf-day, I’ll believe that for today.) The comedy pretty much writes itself from there. It’s something we don’t let her live down, nor should we! But now she’s an expert and let me tell you, if you’re in need of a good “dog laughing in the mirror at himself” video, well she’ll know just which one is best. And I like that.

She taught me faith, she showed me love and she she told me to never stop being strong. She’s the strongest lady I know, and I love her to bits. Also, she helped me appreciate a good cup of tea! Which is a rare and wonderful trait to have these days.

I love her lots and I wish her the happiest darn birthday ever!
