Recipe Time: Soy Mint Chocolate Pudding!

People often mistake vegetarian recipes for “lack of taste” dishes. Nothing could be further from the truth! One of my most favorite soy bevies is Vitasoys Mint Chocolate soy milk. It tastes amazing and I highly recommend it to all of you lovely people out there. It tastes amazing both hot and cold too, so if you’re ever craving a mint hot chocolate, screw those sugary powdered mixes and pricey Starbucks drinks and turn to the Vitasoy brand. You won’t be disappointed. (For the record, I don’t work for Vitasoy. I just like saying it. VITASOY!)

You can also use this lovely drink as a key ingredient in a wonderful little dessert that will delight all the senses. Here’s zee recipe:

Mint Chocolate Pudding

1/2 cup sugar

1/3 cup unsweetened cocoa powder

3 tablespoons cornstarch

2 cups Vitasoy mint chocolate bevie

2 teaspoons vanilla

Directions:

In a microwave safe bowl, whisk together sugar, cocoa and cornstarch. Whisk the milk in gradually so there are no lumps. Place in microwave and cook for 3 minutes on high. Stir and continue cooking until it’s shiny and thick. Add vanilla. Place plastic wrap over it and refrigerate. Serve cold. Makes 4 servings.

The best thing about this recipe and this drink is it has what every vegan/vegetarian loves and gets bugged about most… PROTEIN! Yay us.
And it’s low in fat & calories but high in taste. Win win.
